dc.description.abstract	Treatment of amaranth produces valuable commodities heaving great meanings for human health and live. Mainly amaranth hydrolyzates both producing low molecular sugars and peptides. There is a need to optimize process of hydrolyze and separation of final products. Using theoretical tools of processing engineering the control algorithms in a minimum of main processing costs for production amaranth hydrolyzates was established.	en
